HISTORY
Since 1895 travelers who were coming from the Ligurian Rivieraand were headed to Piedmontacross the valley of the river Bormida could find refreshment at the first post station of the area, which later became an inn for drivers and where you can find,at present,the restaurant Quintilio. We are not far from Savona, in Altare, a little town with a long tradition in glass processing, where renowned glassmakers have handed downthe precious secrets of their workfrom father to son.
In 1930 the kitchen of the restaurant was bursting with activity with Granma Virginia and her two daughters Pierina and Aurora. The glazier Quintilio, husband of Pierina, during his business trips could taste the typical dishes of the other Italian regions: tortellini from Bologna, spongata from Mantua … the couple learned to cook these dishes and offered them successfully to the ever- growing number of customers who stopped in the restaurant of Altare.
In 1975, Isa, daughter of Aurora, and her husband Paolo took over the management of the restaurant: the great passion for the old traditional tastes washanded downto their son Luca. After attending the School for Tourism and Catering, Luca and his wife Lorena, maître sommelier of the reastaurant, carry on the rediscovery of the typical dishes of Liguria and Piedmont, which they prepare with extreme dedication: corsettistampati (thin rounds of fresh pasta with embossed decoration), macaroni “all’ago”, ravioli, pansoti, tagliatelle with mushrooms, truffles, pasta e fagioli (pasta and beans), minestrone (thick Italian soup), Christmas’ soup, stuffed shoulder of lamb, M. Luigia’s rabbit, tripes “in umido”, brandacujun (potatoes and stockfish), anchovies, and last but not the least, the classic variety of fried meats of Piedmont. Finally, the desserts: pudding with amaretti,zuppa inglese, (custard-based dessert, based on trifle)biancomangiare (sweet dessert made with milk or cream and sugar thickened with gelatin), warmflan covered with hot dark chocolate sauce, and mint pudding.
After such a delicious meal, you willreally need some good rest … Customers can enjoy a day of complete relaxation in the five bedrooms with bathrooms of the restaurant that, newly renovated, are expressly available for them. Then, if you want to take a walk nearby, you can visit the Museum of the Glass, take a look at the local craft shops and enjoy the nature with wonderful walks in the area. In addition, by car, the sea is just twenty minutesaway from the restaurant…
MENU
The menu varies in relation to the availability of the ingredients and the use of seasonal foods.
Moreover, the cheese selection, which is always available, is composedaccording to the best products offered by our country (we like to support our local products!).
The cheese tasting is accompanied with our jams: pink berries, caramelized figs with grappa, pears, kiwi-fruits, onions, raisins and bay leaves, quinces, oranges and red pepper.

This recommendationinspired us to create a place with an atmosphere of enjoyable conviviality that can be chosen for a romantic date, a night-out with friends and a business meeting.
It is in this atmosphere that we hope to lead our guests to the discovery of a taste itinerary that combines our selection of wines with the creations of our kitchen.
The wine list includes about 380 labels, alternating big-name manufacturers to others that, even if almost unknown grant products with a high degree of quality thanks to the passion for their work.
The service is performed by the glassbut the retail sales of our wines is also possible.
ACCOMODATION
After such a delicious meal, you will really need some good rest … Customers can enjoy a day of complete relaxation in the five bedrooms with bathrooms that, newly renovated, are expressly available for the restaurant’s guests. Then, if you want to take a walk in the area, you can visit the Museum of the Glass, take a look at the local craft shops and enjoy the wilderness with wonderful walks along the paths of the Alta Via. In addition, by car, the sea is just twenty minutes away from the restaurant…
The rooms are equipped with bathrooms, television sets and free wireless internet access.
The cost of accommodation is only 50 Euros for a single room and € 69 for a double room with breakfast included.
With a minimum stay of three days, you can also take advantage of half board or full board accommodation.
